<p>Leeks are my new favorite vegetable! I am a little embarrassed to learn that leeks are in the onion family. I remember a million years ago for a junior high project, I was drawing a scene and had to draw a leek. I drew a circular blob (which isn&#8217;t far off considering leeks are in the onion family). When I showed my mom, she laughed because it wasn&#8217;t an accurate representation of a leek, and helped me redraw the picture to be more accurate. Anyway, leeks are beyond delicious. Enjoy this recipe!</p>

		<p>A nice and hearty winter soup. Make it with or without protein like turkey meatballs.</p>	</p>

		<ul><li>1 carrot (medium)</li><li>2 stalks celery</li><li>2 leeks</li><li>½ white onion</li><li>400 g russet potatoes</li><li>1 L chicken stock</li><li>1 tbsp butter</li><li>1 tbsp olive oil</li><li>½ tsp garlic powder</li><li>½ tsp salt</li></ul>	</div>

		<ol><li><p>Chop the onion, and fry in butter and olive oil for a few minutes.</p></li><li><p>Thoroughly wash and clean the leeks. It helps to cut them legthwise and rinse with water. Cut the leeks between its green and white bits. Chop up the white section, spray with olive oil, and pop into the air fryer on 350 for 15 minutes. Add carrots too.</p></li><li><p>Chop all of the ingredients into small cubes. </p></li><li><p>Add all ingredients into dutch oven. Add chicken stock. Simmer for 15 minutes. </p></li><li><p>Serve with air-fried turkey meatballs and side salad. Enjoy!</p></li><li><p>Option: Use an immersion blender to blend the ingredients into a uniformly textured soup. I opted to keep it rustic.</p></li></ol>	</div>

<p>Here&#8217;s a fun holiday cookie recipe, double chocolate peppermint cookies! I love baking these. Super easy to make, and the candy cane adds a nice crunch and texture to these cookies. I made these for the first time last year and gave them away to friends and neighbors. I wish I could do the same, but 2020 has its own plans. Nonetheless, these cookies are still super yummy and have a fun holiday twist to them!</p>

		<p>A fun and festive cookie recipe. Make sure to use a food scale to measure the ingredients for the best outcome.</p>	</p>

		<ul><li>½ cup butter (~113 grams)</li><li>3/4 cup sugar</li><li>1 large egg</li><li>1¼ cup flour (~200 grams) </li><li>1/3 cup cocoa powder</li><li>¼ tsp salt</li><li>½ tsp baking soda</li><li>¼ tsp baking powder</li><li>⅓ cup chocolate chips</li><li>1 candy cane (crushed)</li></ul>	</div>

		<ol><li><p>Preheat oven to 350 degrees F (176 C)</p></li><li><p>Cream the butter and sugar together for 2 minutes. Add egg and beat until fluffy and incorporated.</p></li><li><p>Add flour, salt, cocoa powder, baking soda, baking powder, and chocolate chips.</p></li><li><p>Use the ice cream / cookie scoop and form the dough into small balls (heaping 1 Tbsp or ~53 grams)</p></li><li><p>Bake for 10 minutes. The edges should be dry, and the middles are slightly molten.</p></li><li><p>Transfer to a cooling rack to rest until cooled.</p></li><li><p>Enjoy!</p></li><li><p>(Optional) Dependign on the consistency of your dough, you can chill it in the freezer while the oven heats, or as you&#039;re baking each batch.</p></li></ol>	</div>

<p>Borscht is one of our favorite soups of all time. We love beets, we love soup. It&#8217;s a perfect match! I&#8217;ve gotten a few requests for this recipe, so here it is for everyone to enjoy! Lately, we&#8217;ve been leaving out the vinegar to have a more savory tasting Borscht. We also don&#8217;t usually have sour cream on hand, but serving it with cold sour cream is a nice contrast and makes it really lovely and fresh. Borscht is easy to make vegetarian or vegan too. </p>



<p>It&#8217;s hard to wear gloves peeling beets, believe me, I&#8217;ve tried. I see so many recipes and websites warning about your hands getting stained from peeling beets, but I find one good hand-washing is enough to remove the color from my hands.</p>

		<ul><li>2 Tbsp butter</li><li>½ onion (medium)</li><li>1 lb beets</li><li>1 carrot (medium)</li><li>3 tomatoes (medium to large)</li><li>2 potatoes (medium)</li><li>1 L broth (any type will do)</li><li>1 Tbsp Worcestershire sauce</li><li>1 Tbsp ketchup</li><li>2 bay leaves</li></ul><h4>To Serve (Optional)</h4><ul><li>dill (fresh or dry)</li><li>Sour cream</li><li>Salt and Pepper</li><li>2 Tbsp white vinegar</li></ul>	</div>

		<ol><li><p>Thick julienne slice onions and fry in the dutch oven until some slivers are dark brown.&nbsp;</p></li><li><p>Peel and grate (or spiralize) beets. Slice carrot and potatoes. chop tomatoes.</p></li><li><p>Add beets into the dutch oven and saute for 5 minutes.</p></li><li><p>Add everything else into the dutch oven and fill with broth. Add ketchup and Worcestershire sauce.</p></li><li><p>Leave to simmer on high until potatoes and carrots are tender.</p></li><li><p>Right before serving, remove bay leaves and season with salt, pepper, dill (if using dry), and white vinegar.&nbsp;</p></li><li><p>Serve with sour cream and fresh dill.</p></li><li><p>Enjoy!</p></li></ol>	</div>

<p>Refrigerator pickles are super easy. I haven&#8217;t ventured into the world of actual canning yet, so this has to do. It&#8217;s simple and doesn&#8217;t require any canning equipment. These pickles are both sweet and tangy. We really like having them when we build charcuterie and cheese platters.</p>

		<ul><li>1½ lbs pickling cucumbers (, thinly sliced)</li><li>1½ tbsp kosher salt</li><li>1 cup granulated sugar</li><li>1 cup white vinegar</li><li>½ cup apple cider vinegar</li><li>¼ cup brown sugar</li><li>1½ tsp mustard seeds</li><li>½ tsp celery seeds</li><li>⅛ tsp ground tumeric</li></ul>	</div>

		<ol><li><p>Combine cucumbers and salt in a large bowl. Cover and chill for 1 hour or more, up to overnight. Move cucumbers into a colander and rinse well under cold water. Drain, and return cucumbers to bowl. Add onion to the bowl and toss with the cucumbers.</p></li><li><p>Combine the granulated sugar, white vinegar, apple cider vinegar, brown sugar, mustard seeds, celery seeds, and ground turmeric in a saucepan. Bring to a simmer over medium heat, and stir until all the sugar has dissolved. </p></li><li><p>Put the cucumbers into the jars, and then pour the hot vinegar mixture. Gently jiggle the jar so there are no air bubbles. Let cool to room temperature. Cover and refrigerate.</p></li><li><p>Enjoy!</p></li></ol>	</div>

<p>Here is a super simple recipe for an easy dessert. I haven&#8217;t ventured into the world of making my own puff pastry, so store-bought works for me. I like to keep a box on hand for making mille-feuille. This recipe came about from our fridge/freezer breaking down, and we were frantically trying to eat everything we had between the fridge and freezer. Necessity is the mother of invention, and I&#8217;m super happy with this concoction. I will be definitely making this again. It&#8217;s beyond easy, and you can incorporate any fruit. Just make sure the fruit mixture is cooked down and on the drier side, so it doesn&#8217;t make the puff pastry too wet.</p>

		<p>This is another super easy recipe calling for any fruit and pre-made puff pastry. </p>	</p>
	<div class="wprm-fallback-recipe-ingredients">
		<ul><li>2 sheets puff pastry (store bought is fine)</li><li>4 cups blueberries</li><li>2 tbsp butter</li><li>½ cup granulated sugar</li><li>1 tbsp icing sugar (for garnish)</li></ul>	</div>
	<div class="wprm-fallback-recipe-instructions">
		<ol><li><p>Follow the instructions to defrost 2 sheets of puff pastry. </p></li><li><p>Preheat oven to 425°F.</p></li><li><p>Cook blueberries with sugar and butter until reduced. It can take about 10-15 minutes, and the goal is to reduce the amount of liquid in the mixture, so the overall results aren&#039;t messy and wet.</p></li><li><p>Unroll the puff pastry onto a baking sheet, and gently spoon the blueberry mixture onto the sheet. Leave about a 1/2 inch border around the edges.</p></li><li><p>Gently lay the second sheet of puff pastry on top. Work from the centre and gently press down the pastry. Press down around the edges to seal in the blueberry mixture. Use a fork or knife and pierce the top layer of puff pastry so it doesn&#039;t blow up too much during baking.</p></li><li><p>Put the whole thing into the oven and bake until golden brown, about 25-30 minutes.</p></li><li><p>Serve with a dusting of icing sugar. Or vanilla ice cream. Or my <a href="https://www.thelifestyleofus.com/mascarpone-custard/">mascarpone custard</a>. Really, anything goes here!</p></li><li><p>Enjoy!</p></li></ol>	</div>

<p>Crepes are super easy to make, and you can keep it simple or dress it up with fruit and mascarpone custard whip as we have done for this recipe here. I think I might like making crepes more than pancakes because you just throw all of the ingredients into a blender to mix. No need for any crepe pans or utensils. A ladle, non-stick spatula/turner, and a regular shallow non-stick frying pan will do for making crepes.</p>

		<p>Perfect for a laidback weekend brunch. These crepes are beyond easy because you can just toss everything into the blender to mix, and then use a ladle to scoop the same amount of batter for each crepe!</p>	</p>
	<div class="wprm-fallback-recipe-ingredients">
		<ul><li>2 large eggs</li><li>¾ cup coconut milk</li><li>½ cup water</li><li>1 cup flour ((120 grams))</li><li>2 tbsp white sugar</li><li>1 tsp vanilla extract</li><li>3 tbsp melted butter</li><li>icing sugar (for garnish)</li><li>whipped cream or mascarpone custard (for garnish)</li></ul>	</div>
	<div class="wprm-fallback-recipe-instructions">
		<ol><li><p>Combine everything into a blender and mix for until well combined. 30 seconds to a minute should do it. If time permits, let rest in fridge for 1 hour.</p></li><li><p>Heat a non-stick pan. Add enough butter to coat the pan. Use a soup ladle and pour batter into the center of the pan and swirl to spread evenly.</p></li><li><p>Cook crepe for about 30 seconds and then flip. You will be able to tell from the top when it&#039;s ready to turn over. Alternatively, you can lift the crepe a bit to see if it&#039;s brown enough to flip.</p></li><li><p>Sprinkle with icing sugar. Serve with fruit and whip. Or make a batch of my mascarpone custard whip!</p></li></ol>	</div>

		<p>For a savory crepe option, leave out the sugar and add a 1/4 teaspoon of salt instead. </p>

<p>Here&#8217;s a super simple appetizer that&#8217;s perfect for summer! We&#8217;ve been growing heirloom tomatoes every summer, and that&#8217;s is what inspired this dish. Normally I like to grow heirloom cherry tomatoes, but because of the pandemic this year, I didn&#8217;t venture beyond one of our grocery stores to pick up my seedlings. My tomatoes are just started to ripen, and this was a perfect way to eat them.</p>

<p>If faced with multiple options for picking out Prosciutto di Parma (example: 14-month vs 18-month) pick up the more aged Prosciutto. The flavor is richer and more complex.</p>

		<ol><li><p>Slice and destem the heirloom tomatoes. <p>I&#8217;m posting this recipe so I don&#8217;t lose it. It&#8217;s one of our new favourite summer drinks, featuring <a rel="noreferrer noopener" href="https://www.empressgin.com/" target="_blank">Empress gin</a>. You can substitute any good gin here. This recipe originally appeared on Empress Gin&#8217;s website or social media but for the life of me, I cannot find it again. So I&#8217;m posting it again here for my own enjoyment and future reference. We don&#8217;t own a cocktail shaker yet (surprisingly), so I use a mason jar to make this beverage.</p>

<li>If you don&#8217;t have a shaker, use a mason jar.</li>

<p>This is a super easy and cute way to eat corn. We were in the process of eating everything we possibly could from the fridge and freezer. The compressor had gone on our new fridge, and this frozen corn is always something we keep on hand. I saw something on an Instagram Story that gave me the idea for these cheesy corn fritters. I didn&#8217;t get a chance to bookmark it in any way because I got distracted and basically winged this dish with a basic idea of the ingredients. Overall, I&#8217;m extremely happy with how they turned out and will be adding these into regular rotation. Fresh or frozen, this is a good way to eat a ton of corn! </p>

<p>We love corn and always try to keep a bag in our freezer. This batch was made with Peaches and Cream corn, but any type of corn will do. And this recipe will also work well with fresh corn! </p>

		<p>A super easy and good way to enjoy corn. Make them in any size to serve corn fritters as an appetizer or side dish. </p>	</p>

		<ul><li>1 cup Peaches and Cream corn (, any corn will do)</li><li>2 eggs</li><li>½ cup flour</li><li>½ cup Parmesean flakes</li><li>½ tsp garlic powder</li><li>½ tsp salt</li><li>½ jalapeno, chopped</li><li>black pepper (for seasoning)</li><li>½ cup oil, for frying</li></ul>	</div>

		<ol><li><p>Make sure the corn is as dry as can be. Use a colander to drain any excess water. Squeeze the kernels to help drain them.</p></li><li><p>Put the corn in a mixing bowl, add all other ingredients and mix well.</p></li><li><p>Heat up a cast iron pan with a good layer of oil for frying.</p></li><li><p>Use your hands or an ice cream/cookie dough scooper to form a fritters into sizes of your choosing.</p></li><li><p>Gently place fritters into the pan and cook for about 5 minutes each side. Look for that golden brown color before flipping.</p></li><li><p>Enjoy!</p></li></ol>	</div>

<p>This is one of our new and loved cocktails for the summer. I have been hunting for Old Tom style gin for a couple of months now, and finally found some to make this cocktail. It’s my spin on a beverage I had in Austin earlier this year. This style of gin uses less juniper and is typically sweeter. The star of this cocktail is definitely Becherovka, my FAVOURITE herbal liqueur. It has tons of herbs and spices and is great on its own as an aperitif or digestif. This drink is easy to make and even easier to drink. Enjoy! </p>
